As Ray Peat pointed out, button mushrooms are a good source of nutrients.

"Well cooked button mushrooms contain an effective amount of aromatase inhibitors, and can improve digestion, and are very nutritious, similar to meat." - RP

Me - If a person limited dietary fat to the trace amounts in skim milk, sugary fruits, and then used Hydrogenated coconut oil as the fat source in the diet, would that keep PUFA from accumulating with age as well as deplete what is currently in fat stores?

Ray's Answer - Yes. With more knowledge about the composition of fruits, those might be able to provide all essential nutrients, but at present other foods (such as mushrooms, liver, shell fish) are needed to assure adequate trace minerals."


I have been researching the nutritional content of foods, and foods highest in micronutrients. The data regarding the micronutrient content of button mushrooms indicates that they are really a valuable source of micronutrients, especially for people who cannot eat certain foods due to food allergies and intolerances.

What I am wondering is, how much does boiling the mushrooms for one to three hours decrease/destroy the minerals and vitamins in them?

Well, Ray says that well cooked button mushrooms are very nutritious as you quoted.
Sounds like enough of the nutrients remain with cooking.

Estrogen is a major factor in the development of breast cancer. In situ estrogen production by aromatase/estrogen synthetase in breast cancer plays a dominant role in tumor proliferation. Because natural compounds such as flavones and isoflavones have been shown to be inhibitors of aromatase, it is thought that vegetables that contain these phytochemicals can inhibit aromatase activity and suppress breast cancer cell proliferation. Heat-stable extracts were prepared from vegetables and screened for their ability to inhibit aromatase activity in a human placental microsome assay. The white button mushroom (species Agaricus bisporus) suppressed aromatase activity dose dependently. Enzyme kinetics demonstrated mixed inhibition, suggesting the presence of multiple inhibitors or more than one inhibitory mechanism. "In cell" aromatase activity and cell proliferation were measured using MCF-7aro, an aromatase-transfected breast cancer cell line. Phytochemicals in the mushroom aqueous extract inhibited aromatase activity and proliferation of MCF-7aro cells. These results suggest that diets high in mushrooms may modulate the aromatase activity and function in chemoprevention in postmenopausal women by reducing the in situ production of estrogen.

And this on cooking to reduce agaritine:

To answer your question about the absolute best method to reduce agaritine, if you boil in water for 1 hour you lose 88% of the agaritine and if you freeze them for 30 days then allow them to thaw out on their own for 1 hour without microwaving you lose 77% of the agaritine. These are by far the best 2 methods it seems to reduce this toxin.
