I am wondering why we get sore if say we do a new exercise for our legs that is hitting the same muscle group? If we don't get sore from the same exercise until we change it even with similar weights.

Any new stimulus will cause more muscle damage, since the forces working on the muscle are different. It also depends on the learning curve of the new exercise, or how hard you pushed on that exercise. Let's say someone is used to doing squats, but they never push themselves to failure, just because it's such as taxing exercise. Now they hit the leg press and can train that muscle group much harder than usually, hence DOMS. Or if you only do squats, and then suddenly add in leg press, you might get DOMS due to an increase in volume.
Which exercises are you referring to?
