Molecular Structure Of Hormones & Peat

In the Peat paradigm there is a lot of value judgements placed on hormones as inherently inflammatory - or "bad" or "good." This view seems harder to maintain when analyzing the molecular structure of various hormones and similar substances - don't you think? How does the atomic structure of each hormone map to the way we see its functionality in the Peat paradigm? Similarly, we tend to map saturated vs unsaturated fats based on how unstable their molecular structures are - so fats are consistent on this level of reductionism - but I don't see how hormones (and other substances) are...
