I really don't like the taste of milk even though I have no lactose intolerance. So I decided to make cheese instead. It is cheap and easy to make. I noticed that some of you speak here of ricotta cheese. I know it as an Indian 'Paneer'. this is the only cheese they have in India. The only difference is that paneer is hard pressed, so you can then cut it with the knife and put into different dishes. The receipt is simple. Just boil the milk and then add some lemon or vinegar and stir it a bit until the whey separates and then filter it. If you filter it through a cheese cloth and then press, you will have the hard-paneer version. very tasty.
