It surprised me that he said they would be, qualifiedly even, okay.
That's why it sticks in my mind.
At least partly.

Back in the hippie days nitrates were one of the True Evils.

I think he said if you drank some orange juice with it that it would cancel it out. However, please don't hold me to that one.

You know, Charlie, the weird bit I had hovering around in my brain
but didn't have enough confidence in my memory to spit out,
had to do with orange juice also!

What made me hold back even mentioning it was
I can't remember if he said drinking OJ with nitrates was bad or good.
I'm thinking bad...but I really don't know. :oops:

The nitrate isn't likely to be a problem if you eat it with orange juice. I fry the bacon to remove some of the fat, and then refry it in coconut oil, to remove most of the PUFA.

I wonder why that is? :roll:

(Another thing that comes to mind here

One would think that Peat, of all people,
would be back in touch with his perfect, primal, Instinctual appetite. Right?
And yet, his love of bacon would seem to testify differently.
If there is this ability--as some assert--to mindmeld with one's ancestral self,
and find oneself in perfect harmony with and perfectly guided by healthy eating Instincts...
then why hasn't that happened with Peat?
Why does he still crave, like most of us, bacon!? :shock:

Seems the Perfect Primitive Instinct would guide one well away from that!
It should evoke Disgust, not Desire! :)

I raise my own pigs, grain free, just extra grass fed milk. I eat my bacon, fat and all. The fat is noticeably different. I normally get a sugar cure done. One year, the processor messed up and did a nitrate cure. We just ate it with lots of sugar. As my butcher said, if you eat spinach or other greens, you are eating nitrates. Celery juice has much higher levels than what they use in his cure.

Dean: Unless you plan on freezing it, be careful about ordering large quantities, that stuff is very perishable... And I wonder how well it would keep its consistency in the freezer.

I just had some just because I read this thread and I craved it big time. I love that stuff. But it was pork and it didn't have lactic acid. It did contain potassium nitrate (curing salt).
