Aren't vitamins like retinol degraded by heat? Mind you, it's a large serving of liver so there could still be some left...

I can't imagine there would be much loss given a cooking time of only 1-2 minutes. I'm guessing like 10% or something.

I liked the coffee approach,
but the liver recipe/method left me a little meh.

I think using Charlie's small-chopped pieces idea,
in an expansive, flat, hot fry pan is more to my taste.
Searing.
I even add some rice flour as a batter.
Browning.
Spices like garlic, salt, pepper, maybe paprika

Danny's results in a liver mush.

But it's nice the way he serves it.
Takes a portion of the stew and puts grated cheese and salsa on top.
