I suspect (but do not know for a fact) lamb is peat-friendly as it is a ruminant, with 4 stomachs like cattle. Thus saturated fat predominates. However no muscle meat should be eaten in excess in a peat-friendly diet.

Lamb is lower in saturated fat than beef. There’s quite a bit of MUFA and O6.
