It could be due to the lowering of stress hormones. It can also be because it is gut irritating food or that gut bacteria is creating alcohol from food, making you tired.
Frequent urination can also be due to elevated stress hormones though. For instance not eating enough protein with fast digesting carbs can cause that. Or even not enough fat to slow down transit time.

feeling tired after eating is related to A BIG MEAL or high insulin which can spike tryptophan and create serotonin/melatonin.....INSULIN also shuts down the adrenals in some people especially if they have HPA issues (adrenal fatigue)

also blood rushing to the gut for digestion leaves little energy for anything else and this can create sleep and fatigue

the weight loss could be related to water loss and that could be related to LOW SODIUM. even the fatigue could be related to LOW SODIUM and sodium help stimulate the ADRENALS.

LOW SODIUM could be low adosterone or issues with DSH diuretic stimulating hormone.

lastly DIABETES.
if you lack insulin blood sugar is high and that makes you urinate. low insulin means low sodium retention and also increases urination. lack of insulin means cells dont' get fed and you get low energy.

as far as i know, insulin resistance means weight gain, so i dont think thats your problem. sounds like you have high adrenaline, and then the food reduces the adrenaline resulting in the tiredness.
