Ideal Cold Brew Coffee Recipe

Can you all help me brainstorm what an ideal cold brew coffee recipe would look like? Cold brew is better for myself and some folks who are bothered by the acidity of regular coffee. However cold brew can suffer from the following issues:
-- fungi growth
-- less extraction of some nutrients (I don't know which ones)
-- others?

Here are some remedies I've brainstormed so far:
-- organic / low-fungi coffee
-- boiling the water first
-- brew at colder temperatures for longer
-- add some methylene blue

I sometimes add a bit of methylene blue to my coffee anyway, so I wonder if that would prevent any unwanted growths. Any idea how to tell which coffee is least contaminated? Any idea which nutrients are sub-optimally extracted without heat?

If you brew it cold you can still heat it up for a regular hot coffee. Surely the heat will take care of some possible (I imagine negligible) fungal growth. Cold brew in the fridge if you are worried about a room temp cold brew and possible contaminants getting in.

The issue with that would be the toxins already produced by the fungi, right? Besides, I'd like to be able to drink it cold or warm. :)
