How Toxic Is Sodium/potassium Metabisulphite?

Pretty much any processed potato stuff has that in it? Is that like an acceptable evil, or is the extremely damaging?

I heard that metabisulfite binds to an enzyme that is responsible for detoxification. Is that true. I think headaches are the mst common complaint when ingesting metabisulfite.

sodium metabisulfite personally leads to pretty bad brain fog rather than headaches. Also very mild stomach pain to an extent.
