How to use glycine / choosing other collagen proteins?

I regularly enjoy making bone broth and strews, but I'm looking to incorporate more glycine / proline into my diet.

I recently picked up some USP-grade glycine. (I've read bone broth / gelatin can be high in heavy metals / contaminants?) Is this best taken mixed with water, which tastes like a sort of unpleasant sugar water, or can this be used to sweeten hot coffee / hot tea without any issues? Could this be used along with sugar as a sweetener or tossed in with recipes when cooking? I'm slightly concerned that this free protein might form AGEs or byproducts, or denature when combined with sugar, or heat, or other foods.

For picking out gelatin, would grass-fed bovine gelatin be superior to porcine? Is pastured porcine gelatin available for sale? How does bovine collagen hydrolysate compare to these other options? (I also see marine collagen is available in supplemental form.) Thanks!
