How Do Bicarbonate And Vinegar Neutralize Stenches? (Mechanism)

Sodium Bicarbonate and Vinegars/acetic acid are tried and true and traditional „household“ actives to battle bad doors and stenches.

Does anybody know the exact chemical (and physical ??) mechanism that explains these effects?

Do some functional groups of carbon react with groups of the stenchy molecules and form odorless compounds?

Also, would neutralizing some foul odor volatiles also possibly render them less dangerous to health? Im case those stenches are harmful gases / volatiles.

Some room plants are shown to neutralize
gases/VOCs like Xylol, Benzol, Formaldehyd, Trichlorethylene indoors. Is there a similar mechanism at work?
