I have a couple of grass-fed beef bones that I took out of the freezer about four days ago with the intention of making bone broth, but I just haven't gotten around to it yet. The bones have a fair amount of meat attached that I will probably discard or give to the dog as I am doing better these days limiting my protein sources to gelatin, dairy, and shellfish. I know that the histamines in thawed meat develop as it sits in the fridge, but does the same hold true for the bones, and do you suppose the bones are still safe to use for broth after being in the fridge for that amount of time?
