Hi I am new! I have been lurking here for about a week.

I am very interested in learning the science behind food and how it affects my hormones. I must admit that after only 1 week of limiting PUFAs, incorporating dairy, coffee, (already eating eggs), more coconut oil, goats milk and juiced oranges, more Himalayan pick sea salt, I am craving the fresh vegetables and juice I had been concentrating on for the past 1 1/2 years. And WATER! I have all my life been a huge water drinker, I miss drinking lots of water. Coffee leaves a bitter taste in my mouth and I usually need water after. Have not done organ meat yet -- since childhood I have not been a big meat eater. I will try.

I have taken my temp and pulse for almost 3 whole days. Pulse seems lower than desirable (63-48bpm). Temp has stayed between 97.3 (average mornings/evenings) and 99.6(mid day) so far. Historically, my BP is on the low side, my trigicerides are sometimes so low they do not register on some tests (13 about 3 yrs ago) and my total cholesterol was 183. So, I thought increasing sat. fats might be healthy for me. Maybe it was the missing link for me. So far, I my results have been disappointing.

I have gained 1/2" on my waist and @2 pounds in for the week. This is not what I intended :|

I would like to lose inches and pounds.

Everything I have read here, on Ray Peats website, youtube videos, scientific papers, and other sources, indicate that this is really good, sound, scientific advice.

What am I doing wrong? Don't have cash for blood work right now, although soon I would like to have it done. Am I the anomoly (not sure of the spelling here, hope you get the idea :)??

You have to count your calories. A quart of whole milk is about 500 cal and a quart of OJ is about 400 cal.
RP uses 2 percent milk, but you need to avoid milk with added vitamin.
Use cronometer or nutritiondata.com to find out your required calories and intake.
You are supposed to loose waist and gain muscle on this diet. Make sure you get at least 80 grams of
good quality protein daily. Carb shoule be between 33 to 50 percent of total calories. If you want to loose weight
you can cut down fat intake. Pink salt is high in iron, RP does not recommend using pink salt or celtic sea salt.
Celtic salt is high is toxic metal. You can add homemade cottage cheese or strained yogurt to get required
protein. Adding gelatin is very helpful to improve health and improve protein balance.
Eating 4-5 oz of beef liver every week is important, as B vitamins are required to process extra sugar.
Always drink coffee within 1 hour of eating liver, as it is high in iron. Best time to measure temp is 2 hours after breakfast.

It takes up to four years to eliminate PUFA from the body so one week in is not likely to produce significant results although that can happen!

You do have to watch calorie intake and if you are coming from low carb or raw vegan (or in my case going from one to the other!) it will take time to adjust.

It is best to go slow and make changes one at a time. Getting your diet right is the first step and this can take time, especially if you have been avoiding dairy.

Mittir is absolutely correct about the salt. RP recommends Morton's canning salt for its purity.

Do you have any health issues? Thyroid deficiency that you are aware of?

The most important first step is to eliminate PUFA and then focus on diet.

There are different kinds of weight gain. When a person's metabolic rate increases, and stress hormones decrease, for example when adding two quarts of milk to the daily diet, their muscle mass is likely to increase, even while their fat is decreasing. Since muscle burns fat faster than fat does, caloric requirements will gradually increase.

People on a standard diet will typically burn 200 or 300 more calories per day when that amount of sugar is added to their diet; but if extra fat is added, too, some of the extra calories are likely to be deposited as fat. It's important to watch the signs of changing heat production as the diet changes.

Yes, I know people who have lost weight just by eating a raw carrot every day, reducing endotoxin stress. The liver treats PUFA as it treats toxins, but when their concentration is too high, they poison the detoxifying system. Oleic acid, which we can make ourselves from carbohydrates, greatly activates the detox enzyme system.

Yes, that's why a resistant (antiseptic) fiber such as bamboo shoots or raw carrot helps with weight loss, it reduces endotoxin and the stress hormones, and lets the liver metabolize more effectively.

It's the stored PUFA, released by stress or hunger, that slow metabolism. Niacinamide helps to lower free fatty acids, and good nutrition will allow the liver to slowly detoxify the PUFA, if it isn't being flooded with large amounts of them. A small amount of coconut oil with each meal will increase the ability to oxidize fat, by momentarily stopping the antithyroid effect of the PUFA. Aspirin is another thing that reduces the stress-related increase of free fatty acids, stimulating metabolism. Taking a thyroid supplement is reasonable until the ratio of saturated fats to PUFA is about 2 to 1.

Yes, it's best to lose it slowly. When I tried adding about a tablespoon of coconut oil once a day I lost about two pounds a week, for several weeks, without eating less.

Some muscle-building resistance exercise might help to increase the anabolic ratio, reducing the belly fat.

Yes, most of the research shows that it increases the metabolic rate, tending to prevent obesity.

thank you 4peatsse! All of the posts I have read seem so supportive and there is so much knowledge shared here! It feels like a very safe environment to ask questions. Please understand that I am coming at this from a place of trying to educate my self, so if I say something that seems stupid, please know I am sincerely trying to gain knowledge.

*but I did assume it was a "diet to gain muscle and loose" at the same time

(sorry, I do not know how to cut and paste posters' posts -- so I am trying to respond directly to the 3 different posts that I just received without being able to paste them directly into my reply)

I agree 4peatssake that I have not given it enough time -- by the same token, I cannot continue to gain 1inch per week and 2 lbs per week!

As for history -- I am 46, so it is too long and too boring (at least to me after all these years of research to be better and better each day). I have OCD, eating disorders, alcoholism, depression, debilitating migraines, and on and on in my background. I do not believe much in western medicine, so I have tried homeopaths, and many many alternative therapies. I have gaind much knowledge about what works for me and I have come a long way. Currently I feel better in the past 4 months than I have felt in 10 + yrs. my hopes with Peat is to tweek things and improve even more.

I was introduced to the Ray Peat/Danny Roddy material recently by a health/wellness/fitness mentor and have dove into the material. What I have read in the forum has been great and supportive. An environment I wanted to be a part of. Perhaps I should have "lurked" a bit longer so I don't sound so inadequate, but like I said, the forum felt welcoming :)

I will take the advice to continue to limit PUFA and switch to low fat milk. A great place to start!

Hello, and welcome! I am new here, too. I am really encouraged by the results I am getting so far (increased energy and elevated moods). Maybe we will be able to figure it out yet...

It can be a weight loss diet. A week is not very long for you body to adjust. ;) You have to eat what you can digest, assimilate and eliminate. I lost a lot of weight (30+lbs) eating foods that were the easiest for me to do all three with. I also napped a lot in the afternoon.

Thanks Jenn! That's really terrific! I am hoping to "dial in" to my body and just keep improving :)

Thanks Rayof Hope for the encouragement! Even implimenting the suggestions above, the end of yesterday and today have shown improvement!

Thanks Dan, this looks like good information to me! I have changed from goats milk to 2% I think that made a difference. I am willing to keep trying this becase 1. I do think my mood has improved 2. it is much easier for me to stay away from wheat than on the juicing/mostly vegan path -- although I was never totally vegan beacause I would have such cravings that I would break down esp @3-4 in the afternoon and have what ever I could find out of a box (my family does not do what I do with my eating) 3. sleeeping like a log lately even when incorporating coffee which I have NEVER EVER drank. But it is REALLY good with cream and sugar, and most recently gelatin. I thought I could not tolerate the tiniest amounts of caffine, but I guess I was wrong!

I look at my life as an experiment -- no longer trying to be perfect. Just bettere each day
