I read that ground chuck comes from the shoulder portion of the cow. Is the shoulder relatively gelatinous?

Don't think so...Shank is the most gelatinous...prepare it often in slow cooker, meat goes to dogs , broth to me...cup a day.

there is some collagen there but more fat marbling. you could get better gelatin from ox tail.

chuck is like a cheap rib eye.
