Gluten Vs. Protein In Other Grains

In the past I used to reward myself(few times a year) with gluten-free bread that tasted nothing like bread. I avoided gluten because it allegedly damages the gut lining and leads to lower absorption of nutrients. What's so different about gluten protein compared to other proteins in grains? Isn't it just amino acids?

It's not that different than the protein from other land plant grains.
