“When the basic purine structure is oxidized, it becomes in turn hypoxanthine, xanthine, and uric acid, by the addition of oxygen atoms. When methyl groups (CH3) are added to nitrogens in the purine ring, the molecule becomes less water soluble. Xanthine (an intermediate in purine metabolism) has two oxygen atoms, and when three methyl groups are added, it becomes trimethyl xanthine, or caffeine. With two methyl groups, it is theophylline, which is named for its presence in tea. We have enzyme systems which can add and subtract methyl groups; for example, when babies are given theophylline, they can convert it into caffeine.

We have enzymes that can modify all of the methyl groups and oxygen atoms of caffeine and the other purine derivatives. Caffeine is usually excreted in a modified form, for example as a methylated uric acid.“ -Ray Peat

Though the diet recommendations in this article, below, are contradictory, losing 14 years of life eating “cheesy” foods, and then farther down “eat yogurt and cheese”, they aren’t disputing caffeine extending life….

“These so-called longevity pockets are: Ikaria, Greece; Sardinia, Italy; Okinawa, Japan; Loma Linda, California; and Nicoya, Costa Rica.”


“Interestingly, in almost all of the Blue Zones, they drank coffee or tea and wine.”

“Coffee, when taken with food, strongly inhibits the absorption of iron, so I always try to drink coffee with meat. Decreasing your consumption of unsaturated fats makes the iron less harmful. Vitamin C stimulates the absorption of iron, so it might be a good idea to avoid drinking orange juice at the same meal with iron-rich foods. A deficiency of copper causes our tissues to retain an excess of iron, so foods such as shrimp and oysters which contain abundant copper should be used regularly.”-Ray Peat

Here is my coffee this morning, with sugar, flaky salt and the zest of an ORGANIC orange in my my cup, hot coffee poured over it and then hot frothed milk next, and then I topped it with Ceylon cinnamon sugar. So good!

“While the amount of caffeine in a cup of coffee varies depending on the brand, type of beans used, and how long it’s brewed, coffee still has more caffeine per serving than Coke.

Coca-Cola contains only 2.5-3 mg of caffeine per ounce, and Diet Coke contains between 3.5-3.75 mg of caffeine per ounce, which is much less than coffee.”

“Acrylamide is also classified as a probable human carcinogen by the US Government and has also been shown to be a neurotoxin that can damage nervous system function.

Acrylamide forms in starchy foods when heated to 250ºF or more, making coffee's roasting process (at approximately 385ºF) a prime breeding ground. In coffee specifically, acrylamide is formed in the beginning of the roasting process, but as the beans continue to roast, it breaks down. This means medium and dark roast beans are the safer choice.

The neurotoxic and probable cancer-causing aspects of Acrylamide are why the state of California mandates businesses including coffee shops to post a Prop 65 warning (aka Safe Drinking Water and Toxic Enforcement Act).
