Great Lakes Gelatin

- 1 Tbsp Gelatin
- 1/2 Cup Cold Liquid
- 1 1/2 Cup Hot Liquid

1) Soften gelatin in 1/2 cup of cold liquid.
2) Dissolve thoroughly in 1 1/2 cups of very hot liquid with desired flavorings or juice concentrate included as a part of liquid measure.
3) Pour into 2 cup mold and chill until firm before unmolding.

- 1 Cup Water
- 1/2 Cup Non-Hydrolysated Gelatin
- 1/2 Cup Squeezed Orange Juice
- 2-4 Tbsp Squeezed Lemon Juice
- 1 Cup Sugar

1) Soften gelatin in cup of water.
2) Mix and bring to a boil 1/2 cup of orange juice and cup of sugar in a saucepan.
3) Add rehydrated gelatin and cook on medium heat until it dissolves.
4) Pour into mold and chill until firm before unmolding.

Don't use water and use OJ instead.

Thanks for the tip, that's 2 cups OJ, but not sure about boiling OJ.

Getting a lot of unripe oranges lately, need to switch to another fruit/flavor.

Pineapple juice would be good too..they have it at Trader Joes if you're near one in 64oz containers NOT from concentrate.

Ray talked about the Tryptophan content in pineapples, but checking the amino acid composition I don't see this as a problem, the amount is tiny and is for flavored gelatin.

Problem is that juices usually contain enzymes used to dissolve the pulp.

Will try with pineapple juice (fresh/carton) and Tree of Life concentrates. The supermarket has Nevo oranges from Chile.

Thinking about making gummy bears instead.

North American Herb & Spice Grape-e-Power - 100% Village-made (foot work?)
Organic wild red/green grape concentrate made from 100% Mediterranean grapes, preservatol.

Thanks for the gummy bear recipes
(and thanks, too, Cliff for your variations).

The mention of the Tree of Life concentrates brought this problem I've had to mind:
I got some (Vitacost brand) Tart Cherry juice concentrate for use in gummy bear making
(which I've long meant to attempt, but have never gotten around to).

Well, I'm pretty sure that cherry juice concentrate is very allergenic for me--
constant sneezing and nose running all day.
I'm not positive of this,
because I don't want to repeat the experiment.
But it did happen twice.
And it would make sense because Peat has said that concentrates are often allergenic.

So Pete: have you had any trouble with concentrates--those Tree of Life ones...?

Yes, black cherry is problematic, grape juice concentrate seems better (besides fluoride-based pesticides and enzymes).

Only thing I worry about with those is,
if you go to the site and check the materials,
it says: "food safe silicone."

Besides hardening the skin, it can involve fibrosis of the heart and other organs, and can cause changes in blood vessels of the kidneys like those seen in some types of hypertension, and often involves Raynaud's phenomenon and osteoporosis of the fingers. (Silicone functions as an adjuvant, making exposure to irritants, solvents or infections more harmful. This seems to be the reason for the association between breast implants and scleroderma.)

There are molds with other materials (plastic), but not necessarily with bears or in the shape of an ice cube tray.

If you don't mind the size/shape, you could use an ice cube tray or anything else.
