I put some celery, carrots and 2 onions in pot with:
1 pair of Pig feet, 2 turkey necks, some tail bone and some chicken wings/shoulders I think. I barley covered it with water and 3tbsp of vinegar, then let it come to boil and simmer for 4 and half hours.
I got VERY good jelly as result but I am slightly worried after reading about lead, arsenic and god knows what else is in bones of these animals- especially here in Poland.
How much of this bad stuff do you think gets extracted with 4.3h of simmering? If I remember correctly RP recommends just 3h? But it shouldn't be that bad, seeing some are cooking their broth for 12-24h ?
I am also traveling a lot so buying expensive/heavy cookware and finding local farmers is kinda not an option. Should I stay away from broth :) ?
