Ah that's an idea. I suppose the carrot is uncannily resilient and should uphold in the fridge just fine regardless of peeled state. Maybe a ceremonious potential to be had here yet.If you use a grater, the carrot wont be as thin as if you use a peeler so might have less effect. Why dont you peel a big batch once a week,
store it in a bowl with water in the fridge, then you have it to eat the rest of the week without having to peel everyday.
