that's such a good way of putting it...the hypercomparmentalized thoughts, and it makes sense that serotonin would be a cause. I like to draw connections between other traditional forms of medicine or healing and modern, and this is another example. In Ayurveda, the astringent taste is associated with 'collecting thoughts' or 'gathering thoughts' and usually astringent foods are whole grains, beans, peels, and leafy greens...all foods that cause a rise in serotonin. Its also mentioned that excess astringent tastes lead to fear, and emaciation amongst other things

perhaps the initial cause is that people's gut is actually assaulted, high serotonin, so they are compelled to not eat because the common choices would make it worse...so then they actually feel different, a bit better when eating less food because its offensive...and it cascades down from there. Especially when they assume that eating less will lead to better health, its probably like an ego boost or some way of feeling better

This is more to the effects of anorexia than the causes, but figured it was related enough to add in here.

There is more in there about the effects of starvation - eg which tissues are broken down first by cortisol when the sugar supply is inadequate.
