Dr Steven Gundry recommends that people avoid all foods high in lectins, which includes potatoes, tomatoes, eggplants, and others. Lectins he believes causes leaky gut and blood vessel dysfunction.

Yet Dr Peat thinks mashed potatoes are good. I wonder what he thinks of the lectin issue?

I believe most of the lectins are in the skin. Dr. Peat recommended peeling and boiling them for 45 minutes. The boiling of them makes them more digestible.
