it requires a lot of braising (long slow cooking with some water or wine or some liquid)

it isn't collagenous like oxtail

it isn't fatty either

it's a great cut of meat actually

cooked them and they were delicious

very gelatinous, much easier to cook than oxtails which take culinary skill and precision

More meat too, oxtails seem a bit meatless
