If you like, elaborate below. How good is your health / well-being in general?

No joking, my dinner tonight is 2 slices of 4 cheese pizza, a loaf of garlic Asiago bread, a pint cup of potato soup and a coke.

So yea I eat a lot of starch.

Seems that as long as bowels are moving fast and I balance the starch with sugar, I have no issues at all. Quite night and day from when starch made my digestion horrible and energy crash. It's all metabolism, for real.

It is for real. I first discovered this when I was playing around with BCAA's to lower brain serotonin. I noticed in the following days that starch digested absolutely perfect. I had made no other changes. I didn't use anti-biotics or use carrot salad or any of that stuff. Suddenly everything including starch fully digested and came out the other end beautifully.

I attribute this simply to higher energy production throughout the body (including intestines) from lowered brain serotonin, which is what you would have with a higher metabolism.

Very interesting Brian, thanks! I keep thinking... How it could be so simple as lowering serotonin ? Nothing is as simple in human phisiology. Lowering serotonin is killing the messenger but the problem that caused the serotonin to rise is still there probably. Right?

boiled potatoes, steamed white rice, and yams.

Not sure about the yams. I may have issues with them.

You seem very interested in starch as you've posted many threads about it. I don't mean to sound rude but it doesn't really make sense to keep asking about starch every couple of months especially because you keep posting about it in the "Ray Peat" section of the forum. Posting about starch in the Peat section, about how you don't do well with it, the logical Peat response would be "then don't eat it, you have your answer," because Peat's view on starch is that it is not optimal from any source including potatoes. Keyword "optimal." He thinks that certain quality ripe fruits and lactose are better/optimal carbohydrate sources than any starch source. That is his view. He's only written one line that would give you a "pass" to make your own decision about starch:

"There isn't anything wrong with a high carbohydrate diet, and even a high starch diet isn't necessarily incompatible with good health, but when better foods are available they should be used instead of starches. For example, fruits have many advantages over grains, besides the difference between sugar and starch. Bread and pasta consumption are strongly associated with the occurrence of diabetes, fruit consumption has a strong inverse association." - Ray Peat

But that sentence by him is contradicting in itself. He says it can possibly be compatible but then says bread and pasta are strongly associated with diabetes in the same sentence. He doesn't clarify the difference between flour product sources of starch versus simple steamed whole starches and he doesn't mention that people who eat flour products also eat pufa with it in addition to a high pufa diet and people who eat steamed whole starches like potato always add lots of saturated fat to them so it's a weird sentence, it's not very specific.

If you are so interested in starch, the Ray Peat world isn't where you should be looking. It's only logical to look at people who eat lots of it. Read "The Starch Solution" by John McDougall and check out these high-starch eating YouTubers who are having success eating lots of starch as a daily calorie source. They might have some tips for you as to how you can incorporate it into your own diet:

post 116230 +1 The benefits from starch come from caloric density. Eat more fat and sugar with less water, and you should get a similar effect.

If you want insulin resistance and gynecomastia, then yes.

I'm truly surprised that as of now 58% of us report eating starch regularly. I thought I was in the minority all this time. :)

About 250g of white rice as a main source of energy + some kiwi, lemon for vitC. other starches as potatoes, squashes etc.. I can't tolerate well. White rice is perfect. Easy to digest, no anti nutrients..

I cannot resist eating white bread if it was placed on my table, especially if it's hot. So I eat bread almost everyday. I know it's not an optimal thing to do, but sometimes you gotta enjoy life, right? In where I live, bread is superior to white rice because the rice has a lot of PUFA. While in the making of bread little cooking oil is used, my body still can utilize the carbs. Anytime I eat starch with a lot of oil, wheather PUFA or saturated, I can't seem to digest it well, sorta like insulin resistance or something. This goes against what Peat preached about: adding a lot of butter or coconut oil in starch to reduce potential starch issues. In my experience, sucrose and fructose makes me digest starch better. That's why I can eat starchy desserts with less problems. So lean white bread with lean protein along with coke or OJ (or any form of sucrose/fructose) makes me digest the starch well.

I find it weird that my body prefers bread over rice even though bread has gluten.

As long as I keep myself regular with OJ, espresso, carrots/mushrooms, I don't mind eating starch from time to time.

I eat a lot of white rice, which is about as close to sugar as you get while still being a starch.

I feel a lot better and my temperatures are higher when I include starch as my major CHO source. At least 75% of my daily intake of CHO. I usually drink orange juice around my workout, but with my build and activity, I need about 400g carbs each day. Getting this in sugars is simply unfeasible because it would necessitate so much damn fluid in the form of fruit juice, or send myself broke buying exotic Peat-approved fruits. I tried this last year when I first come across Peat's work, I had many issues and struggled to get my temps up. None such issues when I use starch.

PUFA is also all metabolism...

Indeed, pufa depletion single handedly brought up my metabolism. They are one and the same. Also avoiding iron and getting consistent calories.

Yeah and you can eat all the PUFA you want if you have metabolism to spare... it's all metabolism :ss
