Digestive Enzymes for someone who is sensitive to Salicylates

I have this glop in my throat constantly. NAC has helped immediately and I'm only on day 2 of taking it, but a partial dose it makes me feel racey and crazed which is odd because the 1st time I took a tiny amount ( 1 6th of 600 mg) I passed out in gorgeous deep sleep.

If I eat a bite of pineapple when the glop is out of control and I'm choking on it, I get immediate relief, so this points to lack of enzymes which makes sense since I can't really eat fruits and vegetables being as they are very high in Salicylates. By the 5th piece of pineapple I will always end up with wildly fluttering lights in my vision indicating a type of migraine.

Any advice? I feel so stuck.

I tried it a couple of times and ended up throwing the bottle out. Didn't sit right with my system unfortunately.
