De Novo Lipogenesis, Saturated Fat, And Estrogen

I was reading a recent Peat transcript regarding cholesterol. He made a point about how starches produce a different type of saturated fat than sugars. I know gut flora produces SCFA's through fiber/starch fermentation, but what different type of saturated fat is being produced via sugar fermentation in the gut?

Also, the Paleo crowd has stood on the De Novo Lipogenesis theory, yet there is little to be found regarding its true impact on obesity. Starch and sugar, in my research, do elevate insulin levels, but without fat in the diet, they can't make you fat.

Lastly, Ray spoke about how humans become estrogen dominant as we age. He stated that PUFA is driving this increase in estrogen. But how? I understand PUFA knocks down the thyroid, thus keeping cholesterol levels artificially elevated. But this would mean less steroid production. Does PUFA circumvent the DHEA pathway? Is it through increased aromatization of testosterone?
