Cranberry Salad
4 cups fresh cranberries
3/4 cup brown sugar
1/2 cup orange juice
1 cup peeled and diced Bartlett pears (I used 2 large)
1 cup chopped fresh pineapple
Bring cranberries, orange juice and brown sugar to a boil in large saucepan stirring often. Reduce heat and simmer stirring occasionally until berries pop open and mixture thickens. Remove from heat and cool to room temperature. Stir in pears and pineapple. Transfer to serving dish and cover and chill.
