Cooking oils

So the best cooking oils are coconut oil and butter?
I also heard olive oil might not be the best
what is your opinion on cooking oils?

do not cook with oil at all

steam your food, or whatever you can do to prepare them without heated fat

then you can add butter/olive oil on the warm (not hot) food

heated fats are bad, even CO. they all have pufa in them that gets unstable

Olive oil is good for seasoning. Large amounts have too much PUFA for long term use.

Butter is fine to fry in.
Coconut oil is better.
Hydrogenated coconut oil is best (almost 0% PUFA).

Beef tallow is great for cooking.

The best oil for cooking has gotta be ( fully) hydrogenated coconut oil, as boris stated. Harder to get than other types of fat though.

Indeed, do not use oils for cooking except when some of their characteristic is desired (like taste or lack there of from (refined)coconut oil). Butter and tallow are not considered oils as they are solid at room temperature. They should be the primary cooking fats as they also contain many nutrients. Butter is good for low temperature things, tallow for frying and baking at higher temperatures. I would prefer tallow when possible, as the dairy fats can be consumed in so many other forms, but long chained saturated fats are in short supply.
