Cooking And Eating Elastin?

I've heard of cooking and eating collagen as it breaks down, but elastin, from what I've read, can't be broken down by heat.
I'm cooking some Chuck/Shoulder beef cuts and I wondered if I should eat the Elastin aka Gristle.
Will my body be able to digest it?

I cook oxtail for 4 to 5 hours and it breaks down the gristle. I think if it is still tough probably just chewing it wont break it down anymore past the mouth, but it certainly isn't gonna hurt anything. It'll just come out with the corn :)
