I've heard of cooking and eating collagen as it breaks down, but elastin, from what I've read, can't be broken down by heat.
I'm cooking some Chuck/Shoulder beef cuts and I wondered if I should eat the Elastin aka Gristle.
Will my body be able to digest it?
