I quit the one cup of coffee I drank after eating breakfast last week by reducing the amount I drank each day. Before the last day, my knees started to get stiff and one of them is still a little swollen. I think the small amount of cortisol that was elevated from the coffee kept the arthritis at bay. There are other studies besides the one below that show coffee keeping cortisol elevated. Coffee may inhibit cortisol synthesis but if it keeps it in circulation isn't that still undesirable?

Caffeinated coffee does not acutely affect energy intake, appetite, or inflammation but prevents serum cortisol concentrations from falling in healthy men.
