Does anybody if coconut oil remains stable in food even after cooking or not? Also, will cooked coconut oil tend to oxidize more easily than uncooked coconut oil?

Saturated fats don't oxidize easily like pufas. Sat fats are saturated with hydrogens so the is no room for oxygen to bond. Monounsaturated have one place for oxygen to bond and polyunsaturated have many locations for oxygen. Coconut oil (or butter, tallow, and lard) is not 100% saturated though so there is some amount of other oils. As paymanz mentioned, coconut oil one of the best for cooking.
