Is using coconut cream without any gums or additives (such as aroy-d) since it is so high in saturated fat close to as good as coconut oil or are these somehow very different to the body?

I am looking for a thickening agent for instance corn starch, arrowroot, tapioca powder etc. to use topically and in hair (dry shampoo and face powder for oily skin) that is not estrogenic or otherwise metabolically harmful. I thought arrowroot was cool but then saw a study that it is estrogenic so looking for something else.

I thought Dr. Peat said somewhere that squash was good but I am confused because of the fiber content of squash seems higher than other fruits. Is this fiber simply okay, like potatoes are okay, or is squash actually good to eat, in other words would one ideally avoid it, eat in small amounts, or eat as much as desired?
