Why are raw carrots favored over baked?

According to this study, baked carrots had the most impact on bile acids.

Cooked carrot increases absorption of beta-carotene. Raw carrot eaten separate from the meals
mostly passes without getting digested. Heat also decreases antibiotic effect of carrot.

I wonder if freezing them does the same. Does anyone know?
Studies i have seen only talk about cooked vs raw carrot. I know carrot can be grown in winter
and resistant to light frost. I think storing in refrigerator should preserve natural
antibacterial compounds. One study mentioned that shredded carrot does not preserve
well against spoilage compared to whole carrot. It might not be a good idea to
store shredded carrot in refrigerator for long time.

Even with raw, I get orange callouses.

100 grams of raw carrot has about 15,000 IU.
I was eating about 50 grams 2-3 hours after lunch and
avoid eating for next 2 hours to avoid digestion.
I noticed orange callouses in the beginning and later realized
i was getting that color from grating carrot.

RP recommends washing the shredded carrot to remove
some of the beta carotene. I do not do fine grating, it is little
bit coarse. I also avoid chewing too much.
I think adding oil also prevent digestion of raw carrot.
Eating Carrot salad involves a lot of precautions.
Cooked bamboo shoots and cooked button mushrooms are
much easier to handle. I get slightly more benefit from
carrot.

Would eating it too close to a meal actually make it more likely to be somewhat digested by us / bacteria?

RP recommends eating raw carrot separate from the meal.
Different foods take different time to be digested.
It usually takes 4-5 hours for a standard meal to leave stomach completely.
I just pick 2-3 hours after meal for convenience. I do no know for sure, i guess
when carrot reaches the food in stomach some digestion occurs.

Yeah. I'm finding it easier to get around to eating the carrot salad regularly if I grate 3 day's worth at a time and store in fridge. Maybe it deteriorates a little in this time, but seems OK. If I leave it longer than 3 days it can start to deteriorate noticably.

How orange are we talking? I just upped my Vitamin A intake and my natural skin tone is on the warm/yellow side, so I'm wondering how to tell if this is happening. Is it the kind of thing where you can't miss it? Is it a very clear difference?
