I felt my carrot salad was missing a sweet aspect and ginger goes so perfectly with carrots. This syrup is super simple to make and stores in your fridge for about a month.
The syrup is medicinal by itself (do a quick internet search on its effects on testosterone levels) and combined with refined sugar it is contributing to my macro goals. I add a tablespoon or two of this syrup to my carrot salad. It also goes great in any dish I would add sugar and spice.

Ginger Syrup:
- Skin and thinly slice one large root of ginger. (Mine is typically 8x6" at the longest points)
- Boil one cup of water with one cup of sugar. (Or equal parts)
- Add the ginger to the boil for ten minutes stirring occasionally uncovered.
- Turn off the heat, cover, and let the ginger steep for thirty minutes.
- Strain the ginger into a mason jar or air tight container.
