We humans make carnosine from beta alanine, and histidine. Carnosine is the second most abundant nitrogen containing compound in muscles after creatine. It buffers pH which stops the muscles cramping, and getting fatigued due to lactic acid build up, and it is a neuro transmitter in the brain. All other vertebrates except us make anserine, which is a methylated version of carnosine. We can absorb both carnosine, and anserine as in tact di peptides. Presumably anserine functions as good as or better than carnosine in us

There is a table of foods containing both in the study above, and this study says tuna contains 2 grams of anserine per 100g making it the highest food source of it.
