Bean sprouts

Does anybody eat bean sprouts? I feel like they’re a good addition to a stir fry and are mostly insoluble fibre, but I can’t find any info on them about anti nutrients.

I don't think they have anti-nutrients. Once a grain is sprouted and it sheds it's toxic shell it becomes a plant. My son has been reading many good things about broccoli sprouts curing histamine intolerance. Each type of sprout has different nutrition, with daikon sprouts being my favorite tasting! Considering that they are young and their unstable unsaturated oils would not have oxidized in the sun for a long time, like other above ground vegetables, they would safe. I think I will read up more about them. Thanks for that bright new idea reality!
