Yes, very interesting.

Another reason to make cheese and yoghurt, would of course be that these keep better than milk when you have no refrigeration.

I wonder whether ancient people found sheep and goat's milk more tolerable than cow's.


To be honest though, I find it a little hard to believe that the mutation they talk about which made cow's milk tolerable for adults happened so recently in terms of evolutionary time.
