Anybody Here Eating Buckwheat?

I've been having sprouted buckwheat flour (rude health) in my pancakes and found it very digestible compared to white wheat flour

I've been using Bouchard but I don't think it is sprouted. This is probably not good.

I was reading there is rutin in buckwheat used for anti inflammatory, heart , circulation etc.

I love it so much, it tastes awesome with oxtail soup. Mmmmmm..

I eat it mainly for the Magnesium. I eat it about 3 times per week as my main starch ( I prefer to eat it in the mornings, if I eat starch in the evening I prefer to to eat potatoes and not buckwheat, I worry about the fiber, but I usually don't encounter much problems anyway), and the rest of the days I eat potatoes as my starch.

Any opinions on cream of buckwheat? I’ve tried that a few times recently.. felt pretty good to me at breakfast time.
I soaked it with water & lemon
juice overnight
