Making Cottage Cheese With Goat Milk

I've attempted to make cottage cheese (or fresh cheese as it's called) using goat milk for my need of protein. I used 2 litres of whole milk, 2 drops of rennet and 3 tablespoons of lemon juice (incase anybody know these ratios off by heart!). The milk separated slightly into very soft curds...

    Dairy For The Plastic Sensitive

I'm sensitive to plastic, to the extent that water from a plastic bottle tastes disgusting to me and can't drink it. There are studies showing water from plastic containers is estrogenic. I have two tips to consume dairy from plastic containers. 1. Make farmers cheese When I make farmers...

    Cottage Cheese or Farmers Cheese?

What's your favorite? Both are made by adding an acid to separate the curds from the whey. The difference seems to be that for farmers cheese you press the curds to remove the whey, but when you make cottage cheese you leave the whey.

    Farmers Cheese Discussion

@Mittir I'm going to do some home made farmers cheese today. I use 8 cups of whole milk which is around 1200 calories (61 g protein, 93 g carbs and 63 g fat), do you have any idea if the cheese has the same amount of calories? And how much fat is lost during cooking? Thanks.

I found the analysis of vitamin K2 in various cheeses

Its an analysis that was done in Finland, but the suprise is they found Gouda to be poor in K2??? Its seems it depends a lot on the manufacturing process? http://www.fineli.fi/topfoods.php?compi ... 0g&lang=en Its seems that relying on foods is risky.

    Cheese?

Hello, I was wondering if someone could explain why fermented cheese gets a pass, but all other fermented foods are bad? Also, are Wild Fermented Foods any better then foods fermented with a starter culture. I eat allot of whole fruit instead of fruit juice and I'm wondering if I should be...

Does cottage cheese (quark) always have the safe rennet?

Most cottages cheeses (quark cheeses) have under the ingredients "rennet", some even say vegetarian rennet. But all are made with rennet. Is that not a problem like in real cheeses?

What did Ray Peat meant about the horrible enzymes in cheese

I dont quite understand. What do we have to look for. I dont really understand how cheese is made. I now it is made traditionally with "rennet", stuff from one of the cow stomachs. Now they make GMO rennet like stuff from fungi or bacteria, is that what he meant. Or are fungi and bacteria like...

    Paneer

If you've never made this it just occurred to me it is not only easy but very Peat. All you do is boil milk, add lemon, wait for it to curdle, drain and press it. You can add salt or sugar, dust it in potato starch and fry it, eat it with honey, etc. Paneer is milk without the whey...

    Which Cheese Has Vitamin K2?

I managed to find out Gouda has 76 micrograms per 100g and Brie has 56 micrograms per 100 grams. American processed cheese has almost nothing. Emmental (Swiss cheese) is my favourite but I did not managed to find any data on it? Does some of you maybe know about any other cheese?

    Confused about cheese

Ok, so I thought that the cheese should ONLY consist of milk, salt and annimal rennet? Is this correct? Because isn't rennet an enzyme and I thought we're supposed to avoid enzymes and cultures in cheese? Also, don't cottage cheeses always have cultures in them? Thanks so much ya'll!

What kind of cheese do you eat?

No amount of sugar and salt can stop the aftermath of lactose consumption for me. I was drinking milk for about two weeks and ended it when one day I felt like I'd just eaten a bowl of cereal...then a bad thing happened, several times. Cheese is still easy protein and nutrition and I can...

    Cheese Suggestions

I was wondering if anyone could give me some suggestions for good low-fat cheese. I prefer low fat because I am trying to lose weight and feel best when I have 300g+ of carbs a day. I live near a Whole Foods and a Trader Joe's, but other than that my access to high quality stuff is pretty...
