Fluffy Cheesecake Puffs (freeze Well)

Blend the following until smooth:
250 grams cottage cheese (any kind)
2 egg yolks
1 tsp vanilla or 1 T lemon juice or 2 tsp Natural Calm Magnesium Powder (Raspberry Lemon Flavor is nice)
Two tablespoons of white sugar, more to taste if you like
pinch of salt
pinch of cream of tartar (optional)

In a separate bowl:
Whip two egg whites until stiff.

Then fold together carefully so as not to flatten egg whites too much.

Pile into "clouds" (four usually works nice). I bake on parchment paper @ 350 F for 15-20 minutes.

Great for freezing so you can grab and go for breakfast or anytime!
