I found the following list on this page. I don't know anything about the page, though.

Can I assume potassium benzoate is not OK?

Aspartame
BHA and BHT
Carrrageenan
Food colorings and dyes
Gums (guar, locus bean, etc.)
High fructose corn syrup
Monosodium glutamate (MSG)
Nitrates
rBGH (growth hormone in dairy)
Sodium benzoate
Sucrolose
Soy lecithin
Sulfur dioxide
Synthetic vitamins

I guess a list of what is OK would be helpful, too. Water and gelatin. And what?

Are you sure about soy lecithin? That's in every chocolate I've eaten, whether high or low quality, dark or sugary, even cooking chocolate.

Anti-caking agents (eg in salt, sodium ferrocyanide)? I don't know if they are bad or not...they are toxic at a certain level so they aren't good for sure though.

Lindt's 90% Dark Chocolate does not have soy lecithin.

Soy lecithin is definitely junk. These are also soy free (in order of favorites)

Equal Exchange Chocolates 71%, 80%
Green & Black's 85%
Alter Eco 85%
