Tomatoes are a common base or additive in a lot of soups... and for good reason, they have a unique taste which is pleasant in a salty broth. Cream of tartar ( Potassium Bitartrate ) used in small amounts is a possible substitute. I assume this is related to the potassium compounds in tomatoes/other veggies.
To test, try mixing some cream of tartar in salt water ( amount will take experimentation ). You will notice it tastes a lot like a tomato broth.... it's a good base for whenever you are craving something like that. Same idea with tomato cocktails and stuff like that although I've never had those before.
